Abol
Ethiopian Cuisine is owned by Birtukan
and Belete, a husband and wife who have
a four-year-old son named Amanuel.
Since they moved from Ethiopia to the
US, they have been living in Montgomery
County in Silver Spring. They believe Silver
Spring is the most livable city in Metro
Washington. After studying accounting, upon
graduating, both of them have been working
as accountants in private practices.
Abol Ethiopian Cuisine was conceived
from a philosophical discussion between
the husband and wife. It was during Tsom
(a fasting period) when they went to eat
out. The food they got at a restaurant was
plenty but less tasty than they have had
at home. The question arose: Does one go
to a restaurant to eat better than home
and get good treatment, or does someone
go to get plenty of food for the money paid?
It was with this idea that Birtukan researched
for the last tree years and came up with
the name Abol for a new restaurant.
Abol, roughly translated into English,
means "original, authentic." She was convinced
that most people go out to eat for good
food and nice service, so she made Abol
Ethiopian Cuisine as such. Her husband
being vegetarian and Birtukan strictly observing
prescribed fasting (excluding meat and dairy
products) by the Ethiopian Orthodox Church,
hope to attract vegetarians to their restaurant
since more than 50% its menu lists vegetarian
dishes. Cooking and owning her own business
has been a passion for Birtukan all her
life. Now she has realized her dream.
